The Open Kitchen with Tropical Fresh

  • Three kinds of king prawns - Served with tomato aioli and vinaigrettes. Each prawn is marinated differently and laid out in order for consumption. Building to a crescendo on the last prawn a beautifully balanced and visually stunning dish
  • Smoked Jerk Pork with Rum - Served with rice and peas. Smoked with rum soaked apple wood and pimento seeds. Moreish!
  • Sweet Sticky Ribs - A Chinese-Jamaican favourite, everyone asks for this recipe! Superb
  • Tropical Fresh Curried Goat - Served with crispy yam cakes and spinners. This Classic dish is a favourite all over, the last time we cooked this at an event customers forced themselves into the kitchen begging for more! We of course duly obliged
